Cupping Notes: This fine, sustainably-produced Brazilian coffee is produced by a network of family owned farms, surrounding as a hub the Fazenda Ambiental Fortaleza, or "Environmental Fortress Farm" at high elevation in Brazil's Mountain Mogiana region. The arabica varietals contributing to the sweet cup are sourced from Red and Yellow Bourbon, Red Catuai and Red Mundo Novo.
All of the farms contributing to this beautiful coffee use no chemical fertilizers, pesticides or herbicides. The coffee shrubs are integrated into the existing shade canopy forest and mature slow and sweet, accentuating their natural sugars. The cherries are hand picked at peak ripeness and dried either on raised beds or cement patios.
The cup predominantly exhibits solid notes of chocolate and nuts, with a very clean finish. Alpen Sierra takes the roast slightly into the dark roast realm to carmelize the sucrose further and enhance the rich chocolate character.
